Banu's Sesame Sweet Granola

I sent my friend Vicki this recipe. She said, "The granola was really, really good. I say it was the sesame oil that gave it a little je ne sais quoi (the extent of my french)." I don't actually make measurements for this recipe. I figure what I can hold in my fist is around a quarter cup, so there's where the measurements come from. Just do what feels right.

  • 2-1/2 cups rolled oats * 1/4 cup flax seed meal (just blend flax seed)
  • 1/4 cup flax seeds
  • 3 tbsp raw sugar - the crunchy kind
  • 1/2 cup raw sunflower seeds
  • 1/2 cup chopped walnuts
  • 2 tsp ground cinnamon
  • 1/2 tsp salt
  • 3 tbsp canola oil
  • 2 tbsp toasted sesame oil
  • 1/4 cup agave nectar
  • 1/4 cup maple syrup
  • 1 tablespoon vanilla extract
  • 1/2 cup raisins
  • 1/2 cup dried cranberries

Mix the wet ingredients, pour over the mixed dry ingredients EXCEPT the raisins and dried cranberries. Use your hands, it makes it easier. Line a pan with wax paper or foil. Spread mixture in a layer about a half inch thick - don't press it down! Bake for an hour at 300, stirring every 20 minutes or so. It'll still be a bit chewy, but once it's cool, they'll get real crunchy. Add the raisins and cranberries AFTER baking, or else they'll get hard!
