The first time I made it, I used fresh beets - roasted them - but then all the other times I used beets straight from the can - saves a lot of time - and honestly, just as good - if not a bit sweeter. I guess that comes down to a personal preference and time you have.

Beet Hummos
  • 1/2 pound beets (about 4 medium sized beets) or 1 can
  • 2 Tbsp tahini
  • 5 Tbsp lemon juice
  • 1 or 2 small cloves garlic
  • 1 Tbsp ground cumin
  • 1 Tbsp lemon zest
  • Generous pinch of sea salt and pepper to taste

Blend together!--
