Massaged Kale Salad

a tried and true recipe

A friend told me about this idea, and there are plenty of examples to be found on the web. The salt and acid break down the kale, almost like ceviche. Here's my version, plenty of room for experimentation but I like to keep it simple.

  • one bunch or smaller kale (lacinata works well but curly is fine)
  • 1/2 tsp salt
  • fresh lemon juice or rice vinegar to taste
  • tamari to taste
  • extra virgin olive oil to taste

Finely chop the stems, and tear the kale into small pieces. Massage in a bowl with hands. The kale will already be breaking down, so you can potentially add more kale if desired. Add salt and lemon juice or vinegar, and massage further. Toss with several tablespoons of tamari, mix well, and let set several hours, ideally overnight. Add olive oil to taste before serving.
