- 1 medium carrot
- a pinch of salt
- olive oil
- apple cider vinegar
- Dijon mustard
Grate carrots, sprinkle with salt and let stand in a bowl for about five minutes.
Squeeze water out of carrots.
Add vegetable oil, vinegar and mustard to taste.
Toss all ingredients to ensure even coverage.
