Cassandra's Zucchini-Plum Bread


This bread is great because it makes either a healthy snack or a sensible dessert. The initial recipe calls for raisins, but the dried plums (or prunes, as some folks like to call them) give it a sweeter flavor and make it sound fancier. :)


1.5 c. flour

2 tsp baking powder

1/2 tsp salt

1.5 tsp cinnamon

1/4 applesauce

1/2 c. sugar

1/3 c. oil

1 tsp vinegar

1 tsp vanilla extract

1.5 c. grated zucchini

1/2 c. dried plums, chopped

1/2 c. walnuts (optional)

1/4 c. water (as needed)


-In a large bowl, stir together the flour, baking powder, salt, and cinnamon. Add the apple sauce, sugar, oil, vinegar, and vanilla and mix.

-Stir in the zucchini, plums, and nuts, and mix together gently until "just mixed." Add a little water if the dough seems too dry.

-Spoon the batter into a lightly oiled loaf pan and bake for 40-45 minutes at 350 degrees.

-Cool for 10 minutes before slicing.
